- Chunk 1: `[0 : S]`
- Chunk 2: `[S - O : (S - O) + S]`
- ...and so on until the end of the string.

Ensure `end_index` is exclusive (standard Python slicing).
## Error Handling

- Raise `ValueError` if `overlap >= chunk_size`.
