# Nutrition Science: Misconceptions, Numbers, and Sources

> **Part 6 of 6** of the *Food and Nutrition Science* reference (plugin `food-and-nutrition-science`), covering §26–§30. Sibling skills: `nutrition-epistemics-study-design-and-measurement` (§0–§3), `nutrition-macronutrients-vitamins-minerals-and-supplements` (§4–§10), `nutrition-digestion-energy-balance-appetite-and-food-processing` (§11–§18), `nutrition-dietary-patterns-weight-regulation-and-life-stages` (§19–§23), `nutrition-live-evidence-and-reading-a-claim` (§24–§25). Section numbers are shared across the set; a reference written as §N → `skill` points into that sibling skill.
>
> **Currency:** The biochemistry is settled; the applied layer is contested. Two areas are live. See §24 → `nutrition-live-evidence-and-reading-a-claim` for ultra-processed foods, and the 2025-2030 US Dietary Guidelines.

> **⚠️ A field where the biochemistry is solid, the epidemiology is weak, and the public
> discourse is almost entirely disconnected from both.** ⚠️ **The gap between what
> nutrition science can actually establish and the confidence of nutrition headlines is
> wider than in almost any other discipline** — **and understanding WHY (§1–§3 → `nutrition-epistemics-study-design-and-measurement`) matters
> more than memorizing any particular finding.**
>
> **Complements a cooking/cleaning reference (food safety and the chemistry of cooking),
> an exercise physiology reference (§12's energy expenditure), and a psychology reference
> (§1 → `nutrition-epistemics-study-design-and-measurement`'s replication context).**
>
> **⚠️ GOTCHA** boxes mark the claims that outrun their evidence.
>
> **⚠️ Two things stated up front.** ⚠️ **First, this is a reference on the SCIENCE — it is
> not personalized advice, and individual circumstances (medication, pregnancy, kidney or
> liver disease, absorption disorders) change the answers substantially.** ⚠️ **Second,
> §22 → `nutrition-dietary-patterns-weight-regulation-and-life-stages` covers disordered eating and is placed BEFORE the diet content deliberately,
> because nutrition information is not neutral for everyone who reads it.**
>
> **The three ideas that organize this document:**
> 1. **⚠️ Almost all nutrition epidemiology is confounded, and the confounding runs the
> same direction every time** (§2 → `nutrition-epistemics-study-design-and-measurement`). **Healthy-user bias means the people who follow any
> dietary advice differ systematically from those who don't.**
> 2. **⚠️ Dietary PATTERNS are better supported than single nutrients** (§19 → `nutrition-dietary-patterns-weight-regulation-and-life-stages`). **Decades of
> single-nutrient reductionism produced reversals; the whole-diet literature has held
> up better.**
> 3. **⚠️ The measurement instrument is the field's foundational weakness** (§3 → `nutrition-epistemics-study-design-and-measurement`). **Most
> large studies rest on people remembering what they ate, and that error is not random.**

## §26. Misconceptions

| Misconception | Correction |
|---|---|
| Nutrition studies show what causes what | ⚠️ **Most are observational and confounded** (§2 → `nutrition-epistemics-study-design-and-measurement`) |

| Frozen vegetables are inferior | ⚠️ **Often equal or better than travelled "fresh"** (§15 → `nutrition-digestion-energy-balance-appetite-and-food-processing`) |
| Chemical-sounding additives are dangerous | ⚠️ **Not a risk assessment** (§15 → `nutrition-digestion-energy-balance-appetite-and-food-processing`) |
| Gluten sensitivity is always coeliac | ⚠️ **Different conditions; FODMAPs may explain some** (§18 → `nutrition-digestion-energy-balance-appetite-and-food-processing`) |

| Only underweight people have eating disorders | ⚠️ **They occur at every body size** (§22 → `nutrition-dietary-patterns-weight-regulation-and-life-stages`) |
| UPF harm is settled science | ⚠️ **Association robust; causality genuinely disputed** (§24.1 → `nutrition-live-evidence-and-reading-a-claim`) |
| UPF concern is just industry-funded doubt | ⚠️ **Peer-reviewed academic critiques exist too** (§24.1 → `nutrition-live-evidence-and-reading-a-claim`) |

## §30. Method

**§1–§23 → `nutrition-epistemics-study-design-and-measurement`, `nutrition-macronutrients-vitamins-minerals-and-supplements`, `nutrition-digestion-energy-balance-appetite-and-food-processing`, `nutrition-dietary-patterns-weight-regulation-and-life-stages` rests on nutritional biochemistry, physiology and the methodological literature on
nutrition epidemiology** — **energy metabolism, nutrient functions and deficiency
syndromes, appetite regulation, and the standard critical apparatus for reading dietary
studies.** ⚠️ **The biochemistry is settled and needed no verification; the deficiency
diseases and their cures remain the field's clearest achievements.**

**Two searches were run in August 2026**, on **ultra-processed foods** and **the
2025-2030 Dietary Guidelines** — ⚠️ **both chosen because they are live, contested, and
consequential, and because both are frequently reported as settled when they are not.**

**Confidence.** **High** in §1–§3 → `nutrition-epistemics-study-design-and-measurement`, which are the load-bearing sections and the ones I'd
most want read. ⚠️ **Healthy-user bias, the substitution problem, and the systematic
non-random error in self-reported intake together explain most of why nutrition findings
reverse — and the vitamin E and beta-carotene cases give the base rate you should carry
into any new observational claim.**

**High** in §12–§13 → `nutrition-digestion-energy-balance-appetite-and-food-processing`'s framing. ⚠️ **Both common positions on energy balance are wrong in
opposite directions, and the useful synthesis is that thermodynamics describes the
accounting while regulation explains the behaviour.**

⚠️ **§24.1 → `nutrition-live-evidence-and-reading-a-claim` is written as a genuine dispute because it is one.** ⚠️ **I've reported the
strongest version of each side, including that *Nature Food* published opposing
Perspectives side by side, and I've deliberately included the point — made by a
critic-of-the-critics — that methodology must be evaluated independently of funding
source.** ⚠️ **My own reading is stated as a reading, and it is that the association is
real while NOVA is too coarse to be the causal variable, with energy density and eating
rate the better-specified candidate.** **⚠️ Note one sourcing caveat: the Harvard
NUTRITION 2026 analysis is reported from conference presentation via secondary coverage,
not from a peer-reviewed publication I verified.**

⚠️ **§24.2 → `nutrition-live-evidence-and-reading-a-claim` is deliberately reported rather than adjudicated, because it is contested
policy with a political dimension.** **I've given what changed, and the objections from
several directions — Harvard's nutrition department, CSPI, the American College of
Cardiology, a low-carb-aligned commentator, and an alcohol industry coalition — because
the pattern of who objects to what is more informative than any single verdict.**
⚠️ **The observation that opposing camps are pointing at the same saturated-fat
inconsistency and cheering different halves is mine.** **⚠️ Sourcing note: several of these
sources are advocacy organizations on one side or another, which I've identified inline
rather than laundering into neutral-sounding citations.**

⚠️ **§22 → `nutrition-dietary-patterns-weight-regulation-and-life-stages` is placed before the diet content deliberately and is not an afterthought.**
**Nutrition references that treat disordered eating as a footnote get the ordering exactly
backwards.**
