# Design Bread Scoring Pattern
Score bread loaves with planned cut patterns at the correct angle and depth to direct oven spring, prevent blowouts, achieve consistent ear formation, and produce decorative surface results.
## Why This Is Best Practice
**Why best:** Scoring is mandatory in professional artisan bread production, treated as a foundational skill requiring pattern design before application.
**Adopted by:** The Bread Baker's Guild of America and Maison Poilâne (Paris) both treat scoring as a foundational skill requiring pattern design before application. Jeffrey Hamelman's "Bread" — the standard bakery reference — dedicates significant coverage to scoring theory and blade technique. Competition bread judging criteria (Coupe du Monde de la Boulangerie) explicitly assess scoring quality, ear development, and symmetry.
**Impact:** Unscored bread or poorly scored bread "blows out" — the steam from the interior finds the weakest point in the crust (usually a seam or crack) and bursts unevenly. A properly designed score provides a deliberate expansion channel, directing spring where desired, creating the ear (the raised flap of crust along the cut), and producing the characteristic "open crumb" of artisan bread.
## Steps
### 1. Understand the physics of scoring
The score controls the expansion of the loaf during the first 10–15 minutes of baking ("oven spring"):
- Bread releases steam rapidly when it hits oven heat; the interior expands
- A score provides a controlled weak point where the bread expands predictably
- **Ear formation:** a scored cut with the blade at a shallow angle (15–30°) creates a flap that lifts up during baking — the ear; a 90° perpendicular cut opens but does not form an ear
- Deeper cuts (1/2 inch / 12mm+) expose more interior surface, creating a more open crumb at the expansion point
### 2. Select blade and tool for the dough type
**Lame (curved razor blade on a handle):** standard for sourdough boules and batards; allows shallow-angle cuts without dragging
- Curved blade: produces curved ear and better angle control on round loaves
- Straight blade: better for straight cuts on batards
**Razor blade (on a dowel or lame stick):** same as lame; common for beginners
**Sharp serrated knife:** acceptable for lower-hydration doughs (brioche, pullman loaves); drags on high-hydration sourdoughs
High-hydration doughs (75%+) require a very sharp, thin blade and a decisive quick cut — dragging a blade through sticky, high-hydration dough compresses the gas cells and deflates the loaf.
### 3. Plan the score pattern for the dough shape
**Sourdough boule (round):**
- Standard: single slash across the center at 15–30° (produces one ear)
- Cross: two intersecting cuts at 90° to each other (symmetrical opening; no pronounced ear)
- Decorative: leaf pattern, wheat stalk, spiral — requires practice and multiple shallow strokes
**Sourdough batard (oval):**
- Standard: single diagonal slash from top-left to bottom-right (common in French bakeries)
- Double slash: two parallel diagonal cuts (baguette-style)
**Baguette:**
- 5–7 overlapping diagonal cuts at a 30–45° angle; each cut begins before the previous ends
- All cuts at the same angle relative to the loaf axis; consistent depth (~1/4 inch / 6mm)
**Pullman/sandwich loaf:**
- Single center slash at 90° (allows dome to rise without tearing)
- No ear needed; just expansion control
### 4. Execute the cut
**Cold dough scores better:** refrigerating the shaped loaf overnight (retard proofing) firms the surface; a cold, firm dough holds the cut shape while a warm, soft dough drags and compresses.
**Technique:**
1. Draw the blade in one confident, swift motion — do not saw
2. Shallow angle (15–30° from horizontal) for ear formation
3. Depth: 1/4 to 1/2 inch (6–12mm) for most breads
4. Speed: fast and decisive; hesitation causes dragging
**Test:** before scoring the final loaf, practice the motion on a folded piece of paper — the same drawing motion. Score should be confident and linear.
### 5. Troubleshoot common scoring outcomes

### 6. Bake with steam for crust development
Scoring works in conjunction with steam in the oven:
- Steam (Dutch oven lid, steam injection, or a pan of water) prevents premature crust hardening, allowing the scored bread to open fully during oven spring
- Remove steam source at 15 minutes: the remaining baking time creates the final dark, crispy crust
- Without steam: crust hardens too fast, scoring effect is reduced
## Common Mistakes
- **Sawing instead of drawing:** Multiple strokes compress the dough; a single confident stroke is the correct technique.
- **Scoring warm, soft dough from the basket:** Warm dough is sticky and draggy. Always cold-retard or work quickly from a cold dough.
- **Blade angle perpendicular to the loaf:** 90° cuts open but don't produce an ear. Shallow angles (15–30°) are required for ear formation.
