# Apply Laminated Dough Technique
Create hundreds of distinct flaky layers in viennoiserie and puff pastry by systematically folding cold butter into dough through a series of controlled turns — producing the characteristic honeycomb interior and shatteringly crisp exterior impossible to achieve by other means.
## Why This Is Best Practice
**Why best:** Lamination is the only technique that mechanically separates dough into distinct sheets via alternating fat/dough layers, so steam generated by the butter's water content during baking forces the layers apart — producing flaky texture no mixing or creaming method can replicate.
**Adopted by:** Laminated dough is the defining technique of French viennoiserie (croissants, pain au chocolat, kouign-amann) and puff pastry. Le Cordon Bleu, the Culinary Institute of America, and every professional pastry program teach lamination as a core curriculum module. Competition judging criteria for croissants at the Coupe du Monde de la Boulangerie explicitly assess layer separation, honeycomb interior, and even browning — all outcomes of correct lamination.
**Impact:** Suas (2009) demonstrates that a correctly laminated croissant contains 27–729 distinct layers (depending on number of turns), each separated by steam produced from the butter's water content during baking. A poorly laminated dough — from warm butter that absorbs into the dough rather than staying as distinct sheets — produces a brioche-like crumb rather than a flaky pastry. Temperature control is the single variable that determines success or failure.
## Steps
### 1. Make and chill the base dough (détrempe)
Croissant dough ingredients (per 1 kg flour):
- Flour: 1 kg (bread flour, 11-12% protein)
- Sugar: 100g
- Salt: 20g
- Instant yeast: 20g
- Cold whole milk: 550g
- Butter (in dough, not for lamination): 80g
Mix until shaggy (do not over-develop gluten — over-mixed dough tears during lamination); flatten to a rectangle; wrap; refrigerate 4 hours or overnight. Target dough temperature: 40–45°F (4–7°C).
### 2. Prepare the butter block (beurrage)
Butter quality is critical: use European-style butter with 84%+ fat content (less water = fewer air pockets during lamination; less moisture = crisper layers).
**Preparing the block:**
1. Place cold butter (straight from refrigerator) between two sheets of parchment
2. Beat with a rolling pin to form a uniform 6×6-inch (15×15 cm) square, ½ inch thick
3. Target butter temperature: 59–64°F (15–18°C) — pliable but not soft; should bend without cracking
If butter is too cold (cracks when bent): let sit 1–2 minutes at room temperature. If too warm (starts to smear): refrigerate 10 minutes.
Correct butter temperature is the most important variable in lamination.
### 3. Enclose the butter in the dough
1. Roll the détrempe into a rectangle twice the size of the butter block
2. Place the butter block in the center; fold the dough edges over the butter, fully enclosing it (no exposed butter)
3. Pinch seams closed
4. Roll gently to elongate to ~18 inches (45 cm)
**Temperature check:** if the dough feels warm or the butter starts pushing through, refrigerate 20 minutes before continuing.
### 4. Complete the turns (folds)
Each fold doubles the number of layers. Standard for croissants: 3 book folds (double folds) or 6 letter folds (single folds) — producing 27 layers.
**Letter fold (single turn):**
- Roll dough to a rectangle ~18×8 inches (45×20 cm)
- Fold top third down, bottom third up over it (like a letter)
- This is 1 turn; produces 3× layers each time
**Book fold (double turn):**
- Roll dough to a rectangle
- Fold both short ends to the center, then fold the whole thing in half
- This is 1 turn; produces 4× layers each time
**Between each turn:**
- Rotate 90° (open edge to the right before each roll)
- Wrap and refrigerate 30–60 minutes between every 1–2 turns
- Total chilling time: 2–4 hours across all turns
Mark the dough with fingerprints to track how many turns have been completed.
### 5. Shape and proof
After the final turn:
1. Roll dough to final thickness: 3–4mm for croissants
2. Cut: equilateral triangles (base ~5 inches) for croissants; rectangles for pain au chocolat
3. Shape: stretch slightly at the base; roll from base to tip; curl tips inward for croissant shape
4. Place on parchment-lined baking sheet; egg wash (do not get on cut sides — seals layers)
5. Proof at 75–78°F (24–26°C) with humidity until visibly puffed and jiggly — 2–3 hours for croissants (cold dough proofs slowly)
### 6. Bake correctly
- Preheat oven to 400°F (200°C) — high heat produces rapid steam from butter
- Apply second egg wash just before baking
- Bake 15–20 minutes until deep amber; do not under-bake (layers will be gummy)
- The steam from butter water content inflates the layers during baking — this is the mechanism that creates the honeycomb interior
## Common Mistakes
- **Butter too cold (cracks during lamination):** Cold butter shatters through the dough instead of forming sheets. Layers are inconsistent and the dough tears.
- **Butter too warm (smears into the dough):** Warm butter is absorbed rather than layered — the distinction between butter and dough disappears; the final product is bread-like, not flaky.
- **Skipping resting periods between turns:** Gluten tension builds during rolling; without rest, the dough springs back and tears. Each turn needs 30–60 minutes of cold rest.
