Chia options protocol operations.

## Endpoints

Sort modes: `"name"`, `"created_height"`, `"expiration_seconds"`

### Mint Option

- `asset_id: null` = XCH

## Notes

- Options allow derivative-style contracts on Chia
- Exercise before expiration to claim underlying
- Expired options can be reclaimed by creator
